Kale Parmesan Salad
Normally I air fry my kale to make kale chips, but when you wants something with more ‘stuff’ in it this is a good one.
- 1 head dino kale
- Dollop of minced garlic
- 1 lemon
- 1 T olive oil
- 1 avocado
- 1 cup shredded parmesan cheese
- Salt
- Pepper
Chop Dino kale and massage until soft. Add avocado and cheese.
Mix Dressing: garlic, salt, pepper, oil, and lemon.
Add dressing and smash everything together until avocado and dressing evenly coat the salad.
Charlie Bird’s Farro Salad
Charlie Bird’s Farro Salad is a popular salad originating from the New York City restaurant “Charlie Bird,” known for its simple yet delicious combination of farro cooked in apple cider with herbs, cheese, tomatoes, and a light dressing, making it a signature dish of the restaurant; the recipe gained widespread popularity after being featured in the New York Times by food writer Melissa Clark, and is now often replicated by home cooks and other restaurants alike. Once you have the ingredients on hand (especially the apple cider), it is an easy salad to make on repeat!!
Chopped Broccoli Salad with Warm Honey Vinaigrette
This chopped broccoli salad is one of those perfect dishes to keep in your back pocket for dinner parties. It comes together in about 25 minutes, it tastes delicious as leftovers (if you even have them), and feels way fancier than it actually is.
Sheet Pan Lasagna
This is a quick, easy lasagna that makes good leftovers as. You can even use the ‘oven bake’ noodles to avoid having to boil them.
White Chicken Chili
This is a hearty, spicy, fab veggie dish. Lentils are cooked with an aromatic blend of Thai spices — fresh ginger, turmeric, red curry paste and chile — then simmered in coconut milk until fall-apart tender. Browning the sweet potatoes before cooking them with the lentils brings out their sweetness, balancing the heat from the chile and curry paste, while baby spinach tossed in just before serving adds fresh flavor. Serve over steamed white or brown rice, or with toasted flatbread on the side.
The Best Chocolate Chip Cookies
- Preheat oven 350°
- Cream together 1 lb (4 sticks) butter, 1 box (16oz) dark brown sugar, 1.5 cups white sugar. Beat for 3 mins
- Add 2 Tablespoons vanilla and 3 eggs. Beat 1 minute.
- Mix in 5 1/2 cups unbleached flour, 1 1/2 teaspoons baking soda and 1 teaspoon salt.
- Fold in 2 bags choc chips (I like using Ghiradelli), and nuts if you want them.
- Line baking sheet with foil or silicone liner sheet. Make balls of dough 2-3 Tablespoons big. Cook for 12-15 mins (I like 12 to have them more under cooked)
- Freeze extras (they are good frozen too!)
